The Most Delicious Simple Roasted Tomato Soup

If you know me, you know that I love to make hormone healthy eating delicious. But it also has to be simple! No complicated recipes with a huge list of ingredients for me!

I love taking advantage of seasonal ingredients and this roasted tomato soup is a delicious and nourishing way to take advantage of late Summer bounty!

Using a good quality chicken bone broth in this recipe will help to nourish your gut and give the soup a boost of protein. (Here's a great recipe to get you started Immunity Boosting Bone Broth or my favourite Pressure Cooker Bone Broth)


You'll start by simply roasting your tomatoes, onion, and garlic until nicely caramelized, then adding bone broth, seasoning, cashews for creaminess, and blending with some fresh basil.


Warm, nourishing foods like this are great to suport hormones and digestive health when you are feeling depleted or are in the second half of your menstrual cycle and craving comfort foods. If you want to up the protein a little more, poaching an egg or two on top of your soup when you're warming it up is, in my opinion, a delicious meal option!


Roasted Tomato Soup


About 10 Roma tomatoes, quartered (or use the equivalent of whatever fresh tomatoes you have access to),

1 medium red or yellow onion sliced into chunks

4 cloves garlic, peeled and roughly chopped

2 Tbsp extra virgin olive oil

2 1/2 cups chicken bone broth

1/4 cup raw cashews

Handful of fresh basil leaves, or 2 drops of Doterra basil essential oil (save 25% with link)

salt & pepper to taste


  • Add tomatoes, onion, garlic, salt and pepper, to a sheet pan or roasting pan. Toss with olive oil and roast at 400 F until starting to become golden and caramelized ( I like to do this while making dinner so I can keep an eye on the roasting process).

  • Once finished, add roasted vegetables to a large pot.

  • Add broth and cashews to the pot and bring to a gentle simmer.

  • Allow to cool slightly, then add basil

  • Add mixture to a blender, or use an immersion blender to blend until smooth and creamy.

  • Taste for seasoning, and adjust if necessary

  • Store leftovers in refrigerator after cooled
