It's just about the end of October as I write this and I'm still putting pumpkin in just about everything! I love the flavour of anything pumpkin spice and have been adding it to my bone broth hot chocolate, dips, smoothies and porridge, and these energy balls.
I also looove the benefits that pumpkin has! It's soothing for digestion, has plenty of healthy fibre, is rich in Vitamin A, and provides an impressive amounts of antioxidants to help fight off free radical dammage (anti-aging, anti-cancer, etc.)
We always have a batch of energy bites on hand for quick snacks before activities, and to add to lunchboxes as healthier treats. These pumpkin protein truffles are easy to throw together and definitely in the Fall rotation!
Having balanced snacks on hand that are rich in healthy fats, protein, and unprocessed carbohydrates and feel like a treat is so important to get through busy times without reaching for overly processed, blood sugar spiking snacks. I like to have a couple of our favourites in rotation so it always feels like there is a yummy (healthier) treat in the house! These are also great to have on hand as an alternative to Halloween candy if you have kids in your house (or just need something to replace it for yourself!)

Ingredients
1 Cup almond, sunflower, or cashew butter (just nuts and maybe salt)
1/4 Cup pumpkin puree
1 1/2 tsp pumpkin pie spice (or use cinnamon)
1 scoop vanilla protein powder, or 1/2 Cup collagen peptides
2 Tbsp coconut flour
2-3 Tbsp honey or maple syrup (to taste, you'll need less if you're using vanilla protein powder)
1/2 cup organic dark chocolate chips
1 Tbsp coconut oil
Directions
Add all ingredients, except chocolate chips and coconut oil, to a large bowl and mix well. Depending on the consistency of your nut butter you may need to add more flour/protein powder. Continue until you reach a dough-like consistency.
Roll dough into balls and place on a parchment lined baking tray. Place in your freezer for about an hour
Melt chocolate chips with coconut oil in s small pot over low heat.
Roll balls in chocolate and replace on the tray. Sprinkle with a little flakey sea salt, if desired. Set back in the freezer for 20-30 minutes. Enjoy!
